Oladyi

Ingredients:

 2 egg, 4 cups buttermilk (kefir), 2 tablespoons sugar, 1 teaspoon salt, 1 1/2 cup plain flour, 1 teaspoon bicarbonate of soda

Instructions: 

1. Lightly beat the egg, add buttermilk and mix. Add sugar, salt, and flour. At the very end, add bicarb of soda. Mix thoroughly and preferably let stand for 15 to 20 minutes. 2. Heat a frying pan and add at least 1 tablespoon oil. Put enough mixture in the pan to make oladyi of about 7 cm in diameter. Fry on both sides. Serve with sour cream, fresh, fruit, jam or even caviar!
