Instructions:
2 lb chuck roast Generously season all sides of your beef with salt and pepper using olive oil as your binder to make your seasonins stick On your instapot/pressure cooker set yout settings on SEAR/SAUTE Sear all sides of the meat until nice it gets a nice crispy color once you do this take out meat , dice up one onion 4/6 garlic gloves 2 sticks celery and 2 carrots and saute add in your meat once the onions are translucent and then add a whole container of beef broth pressure , 2 tablespoons spoons of tomato paste, cook on high for one hour, after one hour release pressure and turn on saute setting add in a corn starch slurry to thicken up your sauce and then serve on top of mashed potatoes
