Recipes:
Ackee and Saltfish

Ingredients:
Ackee
Saltfish
Tomato
Onion
Scallion
Bell pepper
Scotch bonnet pepper
Thyme
Garlic
Vegetable oil
Salt and pepper
Instructions:
1st - Boil the saltfish in water 2-3 times to get rid of the salt
2nd - Clean the bones off of the saltfish then set it aside
3rd - Boil the ackee
4th - Drain the ackee then set it aside
5th - Chop up the seasonings such as the tomato, onion, garlic, scallion, thyme and bell pepper
6th - Put approximately 3 tablespoons of oil on a pan and sauté the seasonings
7th - Add the saltfish into the pan and cook for about 10 minutes
8th- Add the ackee into the same pan with black pepper and salt (if the saltfish doesn't have enough) 9th - Put a whole scotch bonnet into the pan
10th - Cover the pan and let it simmer down for another 10 minutes
11th -Serve with your choice of sides
